Easy Peasy Pancakes & a Funny Story about Packing.

Here it is, 10pm on a Friday night. I'm laying in bed with a beautiful baby girl snuggled up next to my leg and watching Hallmark Christmas movies. This one is called a Cookie Cutter Christmas. And while I'm watching a Christmas movie about Christmas cookies, I'm thinking about breakfast food. Weird! No, I'm not pregnant... just throwing that out there :).

Every so often I find these great bloggers who have awesome recipes. Then one day they either quit blogging all together or just set their blogs to private and I can't get back to that recipe. Boy does that suck.

So I found a recipe for Easy Peasy Pancakes. Let me tell you... they're easy and oh so good!

I've made them a few times here at the house and they always go over just splendidly.

Oh and back to the movie... the one gal, she's annoying. So overly confident and boasting in her approach to everything. Constantly saying "Compliments of yours truly." That's getting real old and annoying real fast. Anyway back to breakfast food.

Easy Peasy Pancakes

Ingredients:
1 1/2 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

In large bowl, mix flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter, mix until smooth. Heat and eat and enjoy!

So fun story about making pancakes at my house. A little over a year ago we thought we were selling our house. We quickly started packing up and getting ready to move. Then we lived in limbo for a year before it was settled that we weren't selling the house just yet.  Long story as to why we sat in limbo for so long.

Anyway, I still had the griddle sitting on top of the fridge. I pulled it down to make pancakes a couple months ago and couldn't find the cord to the griddle, so we wound up using the skillet. I finally found the box that contained the griddle cord. In fact, I've unloaded a lot of my boxes (not all, I haven't found all. They were separated between a couple storage places). If you ever pack, it is helpful to write everything in each box. Makes it easy to find it again later :).

And here you have it. Pancakes. They're so awesome! You're welcome.

Now if I could just find the recipe that Cracker Barrel uses, I'd be in hog heaven. But these will definitely do!

  1. Hi, Nicole--I used to blog. Still follow you. I am back trying to pick it up again. You are certainly loyal and persistent to keep blogging for all of these years. It's been 2 years since I've posted. Are you moving? The pancakes look great. I never really fix pancakes but I love them with lots of butter and syrup. That might be why I just eat raisin bran. I can't control myself. Nice to "see" you again.
